A PCB design job interview require one of the descriptions as
*Ability to design boards from a power perspective and associated I/O*

Would anyone be able to provide me any quick pointers on this subject of how one designs PCB with these broad topics. Thanks

Well, as you already mentioned "broad topics".
Power (in no particular order):
- track current carrying capability
- Thermal
- Power integrity
- Ripple
- Noise
- EMC
- Isolation (voltage, clearance, creepage)
- Efficiency
- Etc.

"associated I/O" -- As in the I/O for a power supply? Like enable, remote sense, filters, etc.?

Yea for power supply, switching converter, LDO designs.
